Classique Deviled Eggs

 

Deviled eggs are one of my favorite side dishes to bring to practically any gathering. They take little to no brain power, can be made in under an hour, and are an instant crowd-pleaser.

Now, I've tried plenty of deviled egg recipes over the years. I like to consider myself somewhat of a deviled egg connoisseur, and no matter how many variations I try, I always come back to this little concoction I've pieced together over time.

The best recipes don't have to be complicated. In fact, I think the dishes people request again and again are usually the simplest ones. This recipe strikes the perfect balance of creamy, tangy, and just a little sweet, making it a reliable choice for everything from Easter brunch and holiday dinners to summer cookouts and casual get-togethers with friends.

One of the things I love most about deviled eggs is that they can be made ahead of time. As any good host knows, having a few dishes prepared before guests arrive makes entertaining far more enjoyable. These eggs store beautifully in the refrigerator and are easy to transport when you're bringing a dish to share.

Recipe:

Yield: 12 deviled egg halves

Ingredients

  • 8 eggs

  • 1 Tbsp. mayonnaise

  • 1½ Tbsp. sweet pickle relish

  • 1 tsp. yellow mustard

  • 1½ Tbsp. Dijon mustard

  • ¼ tsp. garlic salt

  • Paprika, for garnish (optional)

Instructions

Step 1: Boil the Eggs

Place eight eggs in a pot large enough for them to sit in a single layer. Fill the pot with water until the eggs are almost completely submerged, leaving about a dime-sized portion of shell above the water.

Turn the burner to medium-high heat and bring the water to a boil. Once the water reaches a rolling boil, set a timer for seven minutes and let the eggs cook for the full seven minutes.

Step 2: Prepare an Ice Bath

While the eggs are boiling, fill a bowl with ice and water.

When the timer goes off, carefully remove the eggs from the boiling water using heat-resistant tongs. Be careful not to touch the hot water or the sides of the pan. Transfer the eggs directly into the ice bath and let them cool for five minutes.

Step 3: Peel the Eggs

Once the eggs have cooled, gently peel away the shells, taking care not to remove any of the egg whites along with them.

Step 4: Separate the Yolks

Set two of the eggs aside and cut the remaining eggs in half lengthwise. Scoop the yolks into a separate bowl and set the egg white halves aside.

Place the egg whites directly onto a serving platter, deviled egg tray, or into a sealable container if you're making them ahead. This helps avoid moving them once they're filled.

Step 5: Make the Filling

Mash the yolks with:

  • 1 Tbsp. mayonnaise

  • 1½ Tbsp. sweet pickle relish

  • 1 tsp. yellow mustard

  • 1½Tbsp. Dijon mustard

  • ¼ tsp. garlic salt

Mix until smooth and creamy.

This is where I do a taste test and consistency check. If you'd like a thicker filling, take the two eggs we set aside, halve them, and add small amounts of yolk until you reach your desired consistency.

If you'd like to adjust the flavor, add a little more sweet pickle relish for sweetness, garlic salt for savoriness, or Dijon mustard for extra tang. Once you've achieved your preferred balance of flavors, you're ready to spoon or pipe the filling back into the egg white halves. Here’s the link to the reusable piping bag and tips that I use.

If desired, finish with a light sprinkle of paprika before serving.

Hosting Tip

Deviled eggs can be made several hours in advance and stored in the refrigerator until you're ready to serve. If you're transporting them to a gathering, keep them chilled and garnish with paprika just before serving for the freshest presentation.
